How to open unsigned programs by file click in High Sierra

In the security setting Apple is hiding now a menu in macOS 10.12 Sierra where you could disable Gatekeeper. This single graphical option was removed but you can still run individual unsigned apps from the command line

sudo spctl --master-disable
